Thai Salad And A Bowl Of Rice

thai riceA quick fresh bowl, using all that fresh summer goodness from the garden.

Rice
Cook up whatever rice floats your boat

Dressing
4 Kaffir lime leaves finely sliced
1 chilli, chopped
1 clove of garlic, finely sliced
3 Tablespoons soya sauce
5 Tablespoons of lime or lemon juice
1 tsp coconut sugar or honey
1 tblspn peanut oil

Mix this altogether in a bowl. Taste and adjust.

Topping
1 cucumber cut into cubes
Chopped tomato
Chopped Avocado
Sliced lettuce
Sliced chives or spring onions

Toss all this together in a bowl and dress with most of the dressing (reserve a small amount)

Put the rice in a bowl and drizzle on the leftover dressing. Top with the salad. Sprinkle with a load of whatever herbs you have to hand – coriander, basil or mint and toasted nuts or seeds.

(Kaffir limes are easy in a pot in a sheltered, warm spot. Grow one! The flavour of those leaves is out of this world!)
