Simple Coconut Lime Cake

coconut lime cakeHere’s one for coconut lovers; for busy mum’s (one bowl, two spoons, five minutes); and health nuts!

This is adapted from the “Coconut Cake with Greek Yoghurt and Lime Syrup” recipe in Love Bake Nourish, by Amber Claire. Such a beautiful book, it satisfies my cake cravings just reading it.

100g white spelt flour
75g ground almonds
120g coconut
2 teaspoons of raising powder
100g honey.
165ml can of coconut milk
3 T plain yoghurt
1/2 tsp vanilla
zest of 2 limes or lisbon lemons
pinch of salt

Heat the oven to 180.
Sit the honey on top of the oven to soften while you gather your ingredients.
Butter a 20cm loose bottom cake tin or a loaf tin.
Combine the dry ingredients. Add the honey, coconut milk, yoghurt, vanilla, zest and salt, and mix until well combined.
Scrape into the tin and flatten the top.
Cook for 35minutes, until a skewer comes out clean.
Poke all over with a skewer and pour the hot syrup over.

Syrup

Bring to the boil and simmer for 1 minute
Juice of 4 limes or lisbon lemons
Zest of 2 limes or lisbon lemons
2T sugar
