Pumpkin and Chocolate Muffins

pumpkin chocolate muffinsAnother recipe that comes to you from a request. The Abundant Vegie Patch workshop was held on a rainy, windy day last month. These muffins saved us! We needed chocolate to fuel our inner fires and keep us going. Hats off to all you intrepid wet weather workshop-ees!

Pumpkin is featuring quite alot in my cooking at the mo, as we use up the last of the pantry supply. Mashed pumpkin is super delicious as a vegetable side (I just love the vibrant colour on my plate). It also makes for beautifully moist cakes and muffins that keep well.

Pumpkin and Chocolate Muffins

(for 18 muffins)

1 1/2c wholemeal flour
1 c plain flour
3 tsps raising powder
2 generous tsp cinnamon
1 tsp freshly grated nutmeg

Grated zest of 1 orange (optional)
1 1/2c muscavado or soft brown sugar
3 eggs, lightly beaten
80g melted butter
1 1/2c pureed pumpkin
1 1/2c chopped dark chocolate

Preheat the oven to 180
Mix all the dry ingredients together. I like to whisk all the dry ingredients together in an imitation of sifting.
Add pumpkin, eggs, chocolate and butter and fold gently together until only just combined.

Spoon into muffin tins and bake for 20minutes until the top springs back under your finger.
