Nicola Galloway’s beautiful gift to us all “Homegrown Kitchen“, is such a brilliant cookbook.

It’s a home gardeners kitchen companion, and though it’s wholefood, nourishment plus – the recipes are easily achievable for a family of busy people (and so tasty!) There are no expensive, foreign ingredients (a real let down in many whole food cookbooks) and it’s no one hit wonder – many recipes are already regulars at our table (fish, kale laksa – yum!).

Nicolas passion for nourishing families shines through as she shares how to achieve an affordable, healthy menu in her usual clear, concise way. I learned heaps. If you don’t already subscribe to her blog , I highly recommend it.

Nicola’s Chocolate + Apricot Fudge

100g unsalted butter
1/3 cup of cream or coconut cream
2 Tablespoons honey or 3 maple syrup
4 Tablespoons cocoa or carob powder
1/3 cup dried apricots, chopped
2/3 cup nuts, roughly chopped
1 teaspoon vanilla
pinch of salt

Gently melt the butter and cream together in a small saucepan. When the mixture reaches a gentle simmer, remove from the heat and whisk in the honey and cocoa until dissolved. Stir in the remaining ingredients and pour into a lined loaf tin (approx 20cm x 10cm). Chill for 3 hours or until set. Then cut into about 20 squares.

Coconut cream doesn’t set as firmly, but we happily ate it off the end of teaspoons 🙂
