Fish, Apple and Herb Cakes

fishcakesToday I am sharing a most delicious fish cake. This recipe comes from Rowan Bishop of the Vegetarian Adventure cookbook. Pair it with a lovely spring salad and you will feel pampered within. No sauce required as these are very moist and tasty.

Fish, Apple and Herb Cakes

500g fish, chopped into small chunks

1 thick slice wholemeal bread, whizz to make ½ c of crumbs in the processor

¼ c milk

1 onion, roughly chopped

1 granny smith apple, roughly chopped (skin on)

¼ c parsley, roughly chopped

1 T other herbs – thyme, basil or dill

2 T lemon juice

1 tsp salt

Oil for frying

  • Pour the milk over the breadcrumbs
  • Put the onion, apple, herbs and lemon juice in the processor and whizz till finely chopped
  • Add the breadcrumbs, salt and fish and pulse for 20 seconds, just to combine everything.
  • Heat a heavy frying pan over a medium heat.
  • Take spoonfuls of the mix and using wholemeal flour shape into slightly flattened patties.
  • Put a generous amount of good oil in the pan and cook the patties about 3mins on each side till golden brown.
