Date Loaf

date loafMy favourite cakes are a simple affair. They need to be moist, a little bit sweet and a little bit fruity. Add a slathering of butter and you’ve totally got me.

This delicious, simple loaf comes from Cara Bayly. You could almost call it a bread, but seeing as this is not my recipe I’ll respectfully stick with loaf.

Date Loaf

1 cup tightly packed dates
1 tsp baking soda
1 generous Tbspn butter
1 cup boiling water
90g coconut sugar
1 egg
310g flour
1 tsp baking powder

  • Put dates, baking soda and butter in a bowl and cover with boiling water. Leave until cool.
  • Warm oven to 180° and line a loaf tin with baking paper
  • Blitz date mixture until its smooth
  • Beat in sugar and egg
  • Sift in flour and baking powder
  • Spread into the loaf tin and sprinkle on a mix of seeds
  • Bake for about 40 minutes until a skewer comes out clean

Optional extra: For kids and chocolate lovers add 1/2 cup of chocolate chips with the flour.
