Gluten free Coconut Cookies

A sweet little cookie to help you through the last days of your Winter Preparation Ironman! We love these gluten free coconut cookies from Anna and Roger Wilde’s “Real Fresh Food”.

1/2c nuts
1/2c sunflower seeds
1 egg
1 tsp vanilla
60g melted butter or coconut oil
1/3c raw sugar
½ tsp baking soda
Pinch sea salt
1 cup coconut
2 T arrowroot

  • Warm the oven to 180°C.
  • Grind up the nuts and seeds.
  • Whisk the egg, vanilla, butter, sugar, baking soda and salt together.
  • Add the ground nuts, coconut and arrowroot.
  • Roll tablespoons of the mixture into balls, flatten with a fork or your fingers and leave room to spread.
  • Bake for 10 – 15 mins till brown.
