An Autumn Cabbage Salad

This delicious salad brings together all that is good about Autumn – cabbage, celery, apple and walnuts. It’s a cross between a waldorf and a coleslaw, with a yoghurt and garlic dressing as opposed to drowning your lovely home grown vegies in mayo. The original idea comes from Rowan Bishop and Sue Carruther’s “The Vegetarian Adventure Cookbook”, and it’s a favourite at our table.

The Salad

A small cabbage, finely sliced
1 large crispy apple, finely sliced
1 large stalk of celery, sliced
A handful of freshly shelled walnuts, lightly toasted

Toss all these things together in a salad bowl.

Yoghurt Dressing

3T plain yoghurt
1 or 2 cloves of crushed garlic
1T honey
1 tsp wholegrain mustard
1 tsp salt
2T apple cider vinegar
1T cold pressed oil (I like avocado)

Whisk altogether and massage through the cabbage. Refrigerate until needed.
